Because a dish like this cannot be rushed, it is prepared in limited quantity and is best reserved ahead — call the restaurant and the kitchen will tell you what is possible for your date. It anchors celebration dinners: surround it with polo, naan, vegetable plates and a full pot of tea, and the table takes care of itself.
