Hand-Pulled Noodles

This is the craft the kitchen is built around. Laghman — if you know it as lagman or лагман, it is the same word — begins as a plain ball of dough and becomes noodles only when you order: stretched, swung and slapped against the counter by hand, never cut by machine, never made ahead. The result is a noodle with real tension in it, springy enough to carry a wok-fried sauce of meat and vegetables without going soft.

Traditional Laghman comes tossed in the classic stir-fry; choose Taranchi style with finely chopped meat, or upgrade to the Dolan’s Special style. Korma Chop takes the same noodles and dry-fries them until the edges catch and crisp. Every bowl is made to order, so at busy hours the noodles are the thing worth waiting for.

One kitchen note: because the dough is worked fresh all day, portions can sell out late in the evening — come early if laghman is what you are here for.
