Traditional Laghman (Original)
A single rope of dough, folded and stretched and folded again until it becomes a bowl of noodles. Then a fast stir-fry of meat, pepper and tomato goes over the top, and you mix it yourself at the table. Nothing about it is complicated; everything about it depends on the pulling.

How laghman is made
The dough rests before anything happens to it — rushing that step is why machine noodles snap. A cook takes the rested rope, doubles it, stretches, doubles again, and keeps going until the strands are the right thickness. Because they are pulled rather than cut, the surface stays slightly irregular, which is exactly what makes sauce cling. The topping is cooked separately and fast, so the pepper stays green and the tomato has not collapsed into paste.
Ordering laghman: how much, and for how many
One bowl is one person. It arrives unmixed on purpose — turn it over a few times before the first bite so the sauce reaches the bottom. There is a spicier fried version if you want the noodles to carry more heat, and a rice noodle version for anyone avoiding wheat-forward dishes.
