How Big Plate Chicken is made
The chicken goes in bone-in, which is the part most versions get wrong — bone is where the sauce gets its body. It cooks down with potato until the potato starts to fall apart and thicken everything around it, then long green peppers go in late so they keep their bite. The noodles are pulled by hand the same day and laid under the stew at the last moment, so they take on the sauce without turning soft. A boneless version exists for anyone who would rather not work around bone.
