Uyghur food has a reputation for lamb and noodles, but the vegetable side of the table is just as old. Shredded potato sharpened with vinegar, eggplant braised until it collapses, green beans blistered with garlic and chili, and cabbage fried hot and fast — these are the plates that balance a meal built around the grill. Everything in this section is meat-free, and because the whole kitchen is halal, there is no alcohol used in any preparation either. Vegetarian guests can also build a full meal here: naan from the starters, two or three vegetable plates, and hand-pulled noodles requested without meat where the kitchen can accommodate — ask, and we will tell you honestly what works.

These four plates carry the exact names a Chinese home kitchen uses — suanla tudousi, hongshao qiezi, xiangla sijidou, su chao yuanbaicai. That is not a coincidence: vegetables are where the Uyghur and Chinese tables overlap most. The difference at Dolan's is the kitchen behind them — no pork fat in the wok, no alcohol in the sauce, 100% halal.
